10-Minute Peanut Butter Banana Pancakes




Ingredients
  • 2 large eggs
  • 2 medium bananas , pealed
  • 2 tablespoons peanut butter
  • 1 teaspoon baking powder

Instructions
  1. Preheat a large frying pan or griddle to low-medium heat.
  2. Place all the ingredients in a blender and pulse until smooth.
  3. Lightly grease the frying pan/griddle with non-stick cooking spray or oil.
  4. Pour about 3 tablespoons of batter onto the griddle. Fry until you see a few air bubbles on top of the uncooked side. Flip, and continue to cook for 1-3 minutes on the second side.
  5. Repeat with the rest of the batter.
  6. Serve with peanut butter, yogurt, maple syrup or whatever toppings you prefer.

Notes
  1. *To freeze pancakes, place a sheet of wax paper between each and put in a plastic, zipper closed bag. Reheat in the microwave for about 10-20 seconds per side, or toaster oven at 350F degrees.
