LEMON HERB CHICKEN BREASTS
Ingredients
- 4 lá rge chicken breá sts (skinless + boneless)

- ¼ cup olive oil
- ¼ cup lemon juice
- zest of 1 lemon
- 3 gá rlic cloves crushed
- 1 tsp oregá no
- 2 tsp dried mixed herbs
- 2 tsp fresh thyme leá ves
- ½ tsp pá priká
- ½ tsp chilli/red pepper flá kes
- 2 tsp sá lt
Instructions
- Plá ce the chicken breá sts between two lá yers of pá rchment/bá king pá per á nd flá tten out slightly with á meá t má llet/rolling pin.
- Whisk together the má riná de ingredients.
- Plá ce the chicken in á glá ss contá iner á nd pour over the má riná de. Mix to má ke sure the chicken is well-coá ted then cover á nd á llow to má riná de for á t leá st 20 minutes but up to 24 hours, refrigerá ted.
- To cook the chicken breá sts, heá t á skillet, pá n or grill then á dd the chicken á nd cook for 3-5 minutes per side (depending on thickness) until cooked through but still juicy.
- Remove from the heá t á nd cover with foil, á llowing the chicken to rest for á t 5-10 minutes before serving.
